CORN CREOLE (Joy of Cooking)

  • 2 cups chopped tomatoes
  • 1 medium onion
  • 2 cups frozen corn
  • 1 1/3 cups shredded cheddar
  1. Heat tomatoes in a double boiler
  2. Saute onion in butter until translucent
  3. Undercook corn
  4. add the above together, add cheese - stir until
    it melts
