CORN CREOLE (Joy of Cooking)
- 2 cups chopped tomatoes
- 1 medium onion
- 2 cups frozen corn
- 1 1/3 cups shredded cheddar
- Heat tomatoes in a double boiler
- Saute onion in butter until translucent
- Undercook corn
- add the above together, add cheese - stir until
it melts
