- 3 QTS & 1 CUP WATER
- 1 LB BLACK BEANS
- 2 CUPS CHOPPED RED ONION
- 1 BAY LEAF
- 28 OZ CAN TOMATOES CHOPPED
- 2 TBLS LIME JUICE
- SIMMER HAM HOCK IN 3QTS WATER 1 HOUR
- ADD BEANS,ONION, AND BAY LEAF SIMMER 1 HR OR UNTIL BEANS ARE COOKED
- ADD TOMATOES, CUP OF WATER COOK 45 MIN
- DISCARD HAM HOCK AND BAYLEAF STIR IN LIME JUICE
- SERVES 8
